I had a "carb crash" today. It was horrible. I really didn't feel well. So at around 3:30pm I ate a muffin. At first it wasn't working so I figured that wasn't it, until around 6:30pm. I started feeling better. I'm guessing it took a bit of time for the carbs to be diggested into my body. Well, now I know.
