OK, so I wrote this post yesterday and forgot to actually post it. Yep it shows that my mind was not here. Thankfulness Journal Day 8 Sleep! I have never been one of those girls that could sleep until noon, My senior year of high school I interned at a radio station in the mornings from 5:30am-8:30am, School from 9-3, work from 3:30-10, Rinse wash and repeat 5 days a week, Saturday worked 8-5:30 Sunday from 12-5:30. I was very blessed with my job because I was able to get a lot of homework done at work, but needless to say that year I learned how to live on 4 or 5 hours of sleep and actually function. Although I now get more than the 4 or 5 hours, I usually wake up after about 6 or 7 hours regardless of what time I went to sleep. Sometimes I feel like my body just craves more sleep but my mind refuses to let it. For the last couple of nights I have slept between 7.5 and 8 hours per night. That is kinda a big thing for me. I have not enjoyed missing my cuddle and play time with my puppies.
Today Thankfulness Journal day 9 Pottery is one of those things that is a big stress reliever for me. There is something about clay between your fingers and forming a big ball of clay into a cool vase/cup/bowl/plate/dish/fountain, etc that I just love. Tonight I get to play with my glazes I bought on Saturday for the first time! I also love that my sister takes the class with me so I have sister time too. I am so lucky to have my sister as one of my best friends! Wed is also hump day. By 12:00 I am officially half way through the work week and I end my hump day with my hands in clay!!!
Tomorrow we are doing dinner with our family that is in town and we are going to Red Lobster. Right now they have their endless Shrimp going on and I am a little sad knowing I am not going to get the mind blowing endless shrimp. I looked up the calories of what I used to get when I went with a friend of mine and did endless shrimp and I could easily have 4000 calories in one meal with the salad, bread, and all the shrimp. As much as I would love to have the amazingly yummy coconut shrimp, and shrimp scampi, and parmesan shrimp, shimp linguini alfredo, my desire to be healthy is still stronger than my desire for the shrimp feast of yumminess. I will have the grilled shrimp and salmon without the glaze, a salad with light vinegarette dressing, baked potato with no butter. I will have half of a cheddar biscuit, and I will skip the lava cake we always share.

I went to Red Lobster over the weekend. I had the New York Strip and Lobster Tail - the most expensive item on the menu! I had it with asparagus and a salad, and I didn't eat any cheesy biscuits because I also had a side of mashed potatoes. Those potatoes were my favorite part of the meal. That was the first time in 8 months I had allowed myself to eat mashed potatoes. It was AWESOME. I took my blood sugar 2 hours later and it was only 117. So that was a great experiment! It sounds like you have got a great plan for getting through the Red Lobster process. I looked up the menu online before I went and decided I wanted the steak and tail beforehand. I didn't plan on it costing 30 bucks! (Forgive my vulgar mention of cost, but to me that's a lot for a place like Red Lobster and they have nerve to charge that). I love it when restaurant experiences are low-stress. And I also love online menus and nutrition information. Who knew I'd be doing research like that before I ate a meal. It's a whole new thing for me. Sound like you are doing great and you'll have a good meal and a great time.
