Soup as the new salad

Made a useful discovery today. In the summer, I'm perfectly happy to throw leftover cold fish or chicken on lettuce and call it lunch. But in cold weather I want something heartier.

So..over last weekend I made a huge crockpot full of low-carb veggie soup with a tomato base. And today, for lunch I heated up the soup and on impulse threw in a few ounces of leftover scallops from dinner last night. Voila. Fish stew. It was really good and got me to thinking that I can do the same thing with chicken breast, turkey sausage, tilapia, etc. and have a much more satisfying meal than leftovers with salad.

Any other ideas like this?

i love a good soup and i know it sounds strange but a chicken breast in beef soup is amazing with a slice of whole grain rye bread torn up in it

This is a great idea that I've been reading up on. There are actually tons of health benefits from making 'bone broth' from chicken and beef/lamb bones.

My last bit of chicken stock I froze in ice cube trays to save for later. It actually worked out pretty good.

Every so often I buy a chicken to roast and shred. Then I portion it out into wee bags and freeze it, to add into salads and broths. The carcass ALWAYS goes into a pot with water, carrot, celery, onion, and herbs. I boil it up for an hour or so, strain it into a bowl, and skim it when it's cold. Then that gets frozen, too, for soup bases. BEST EVER.
I've never met a cheese I didn't like.

That's my recipe for stock too - and it makes the house smell so so good.
