healthy thanksgiving

i was curious what everybody was planning to have for thanksgiving......i am having duck,mashed cauliflower,butternut squash and green beans.my husband will eat it and the kids will eat what they like and be fine.no dessert or rolls.if they want something else they can fix it.

I plan on having ham, sweet potatoes, green bean cassarole, cresants, and pumpkin pie(low cal). We are goint to splurge on that day. I'll just Zumba twice as much, lol. =)

There is a thanksgiving day 6k in my area. I think I am going to do that so I don't feel too guilty for the food I partake in. We are going to my mothers house so I can't control what is there; I am just going to try and watch my portions.

We always do a low-carb thanksgiving. I manage my Crohns Disease with a low-carb diet (reduces inflammation), my mom is diabetic and my MIL manages her Lupus also doing Atkins. I always make a sugar-free pumpkin custard without crust (basically follow the directions on the can of pumkin, replace sugar with splenda granular and bake in a pie pan w/o crust).

Some other thanksgiving favorites are creamed spinach (I believe I entered the recipe in the FS database) or green beans alfredo with nut crust. Mashed Cauliflower is also a favorite at our table.

Hey, Sararay! You could fancy up that pumpkin pie by pouring the custard into a pumpkin shell. Make sure you buy a hollowed out pie pumpkin (sweeter and better tasting than other pumpkins). The pumpkin actually steams it and makes it creamier than cooking in a pie tin.

As for my family, last year we did Sushi at our favorite restaurant. I had mono and wasn't going to cook at all. I think we'll do the same again this year. It was so much fun (and easy to clean up afterwards).

I will change a lot of our regular items to make them healthier but for the most part have the same foods. I will just make sure to only have a small portion of some of the options and leave the rest for the family to grub on.

Turkey
Pork (hispanic must have)
Salad
Sweet Potato
Whole wheat rolls
Apple pie

There will be other dishes but these are the ones I will be munching on.

Since I have wheat allergy, I can't have any bread, pie or stuffing. I am planning a corn polenta with stuffing seasoning. I will not be putting stuffing in the turkey as I will be slow-smoking it in a nice mesquite-oak fire.

Instead of pie, I am making a pumpkin pudding for dessert. Basically, you take the pumpkin pie recipe, add an extra egg, and pour into a buttered casserole. Bake about 45-55 min. until a thin knife inserted comes out clean. Serve with maple-flavored whipped cream.

A Northwest cowboy kind of Thanksgiving.
