I workout for 1 hour 5 days a week (at 6am), work a desk job 8 hours a day/5 days a week, and do commercial cleaning 2 nights a week after work...by 8:00pm, I'm ready for bed... Anyone else feel that way? Is that normal...anyway I can combat feeling so tired at 8:00pm?

I'm soooooo with you! Last night, I did something new though. I usually go home, take a shower (since I workout usually after work) and get in my comfy clothes that I sleep in. But last night after I took my shower, I put jeans and a t-shirt and socks on and did some cleaning and some homework (oh, did I mention I am also in grad school full time?!). Then I took my dog for a walk and I didn't have the urge to want to go to sleep at 8:30 like I normally do. Ha! I mean I sleep great throughout the night, but for some reason I feel like I've been run through a pulper by 8:00! I am consciously trying to come up with ways NOT to be so exhausted so early so that I can spend time with my hubby when he gets home from work (he works retail and this time of year, I'm lucky if I see him before 9...)
So, that's my first piece of advice...try not to get into clothes that make you want to head right for bed. Go for a walk if you have a well lit neighborhood when you get home from work.
Let me know if you can think of other tricks, because I'm definitely having the same issue!!!

So far, the only thing working for me is to not sit down once I get home. I wonder if saving some calories for a snack around 7:30 would boost my energy...I might need to try that.
I'm going to try to wait to put on my night clothes until later and see if that helps.
I start classes again in January, I'm honestly wondering if I can juggle everything. I also have 2 puppies and a boyfriend I don't want to neglect by sleeping all the time.

weigh in
Good luck! I weigh in every day which has to stop. It is too easy to get caught up in the excitement of seeing the scale drop so much in a week-that is because of water weight I am sure.

Need suggestions on healthy/low-calorie foods.
You can use shakes for a few days. I have used the Atkins shakes and they are very good tasting. Soups are good though as stated above you may have to puree them. You could puree or blend cottage cheese ...
