I usually go home for lunch every day, my 1 yr. old included. I take an hour lunch. Lately I've been having salads for lunch but am starting to get tired of them.
Any suggestions on easy to prepare lite lunches, besides salad?

I like to heat up a can of black beans. A little grilled chicken or some other veggies balance out the meal. Another favorite of mine is to saute fresh spinach and fresh garlic in olive oil. It reheats well. I also grill up chicken in advance with different seasonings. Then I can have chicken and beans, spinach and garlic, etc. Of course there are also frozen SB dinners.

Just like bullytrouble I have leftovers from dinner. My husband does not eat a lot of what I make (my husband is like a five year old when it comes to veggies
), so depending on what is left I either bring it to work or freeze it.

socrzy...i"love" your husband...lol
i ususally take celery, lunchmeat, cherry tomato's lettuce and a little mayo with dill, lemon juice and garlic. spread the mayo mix on the lettuce and wrap it around the rest of the items...that way it is not messy...

I usually have lunch meat and fruit. When talking with a nutritionist, she suggested Boar's Head because there are no perservatives.
I try to find the combination of meat with cheese that I like and stick to it until I have to change because I am over it.
The turkey, Londonport roast beef, and swiss cheese are great!

I have found that I really like the SB lunch wrap kits. They have a nice combo of meat (usually chicken or lunch meat) and cheese and come with jello. The cup is pretty small so I will have an additional pre-packaged cup. I recently discovered this Asian inspired one with orange sauce and crunchy noodles and it's fantastic. I am very much a bread lover and these meals really satisfy me. I also will have a wheat pita pocket and stuff it with lettuce, reduced fat cheese, ranch dressing or mayo, and the grilled chicken strips you put in salads. This still gives you a salad, but with something else. I'm not a big salad fan, but I like this. And to add another one, I also will eat the SB frozen meals. I have found that they make me hungrier after an hour, whereas the others listed last me about 2 hours.

I like soup, either homemade or lite canned, so as not to have too much sodium. Add a half a turkey or lite lunch meat sandwich and a piece of fruit.
