potato skins

If you scoop out the potato and just eat the skins. (delicious if baked in the oven and eaten with a bit of butter and seasoning) can you eat them on Atkins and be getting mainly fibre and few carbs, or am I kidding myself? Would like to know what other members think.

You know that I have read this in the past too. The skin is the fiber. As long as you can get out all the the starch, which turns to sugar as soon as it hits your tongue, keeping this snack to a minimum, I think, would be okay.Smile

I dont bake potatoes very often and I think if I am diligent about getting the flesh out its probably ok for a treat snack. I was thinking about grilling some grated cheese in there next time.

Potato skins was a recipe in the original Atkins Revolution book, if I remember correctly. Lots of cheese, bacon, and sour cream...yum!
