Chicken Soup Substitute

I know a lot of us have been sick lately and craving that old favorite, Chicken Noodle soup. Well, if you're at a point where you can't have noodles yet, try this instead:

Bring 6 c. chicken broth to a boil. (You can use the low sodium variety if you choose.) Slowly stir in 2 beaten eggs. The eggs will "flower" or cook quickly in very thin sheets. You can also add sauted onion, green onion, carrot, celery, or any other veggie you like in your soups. It's not noodles, but it's an easy pick me up kinda dish. This will be much thinner than the Egg Flower Soup you get at chinese restaraunts, but it's just as good, and in some cases better. Enjoy, and feel better!

You are so sweet to post this!!! I've been craving Wonton soup but of course that would be a bad bad thing to have. I bet if I make this & add in some Chinese hot mustard I could "trick" my taste buds!!

Thanks for the receipe....when I was young my Mom made this soup at least once a week. She added escarole and parmesan cheese to your receipe. It was delicious!!

I have made this soup a couple of times in the last 2 weeks. It is a great snack. It really feels good going down.

Can't beat chicken soup with lokshen, and the egg noodles work a treat. Wink
