My absolute favorite breakfast salad is greens topped with a slice or two of chopped bacon (I put it on the salad while still hot), then 2 over easy/med eggs, avacodo, sliced jalapeno's (from the jar) and a drizzle of balsalmic vinegar. Then I chop it all up together, yummy. Kind of like a warm spinach, bacon & egg salad.

Just made another one very similar with 3 strips center cut bacon (only 70 calories), cut into pieces, cook then add a couple of handfuls of cut up kale, saute. Cook seperately 3 eggs over easy/med. Then place kale on plate, top with eggs and some jalapeno's, chop up and enjoy! Almost forgot the splash of basalmic vinegar on the kale before placing the eggs. Makes the kale not bitter.

Try Shaksouka. It's a thick north african tomato, onion and pepper stew, spiced with cumin and smoked paprika that you poach an egg (or two) in.
Traditionally it's cooked with a ton of oil but I leave that out and use a low cal olive oil spray.
I add extra griddled aubergines and courgette (eggplant and zucchini) to mine and make the sauce up in bulk, frozen in portions then just reheated in the morning, crack my eggs into it and let them poach until they are ready. Served with puffed corn or rice cakes (traditionally it's eaten with flatbread).

Why get hung up on "appropriate" foods for breakfast? Doesn't make sense to me. What works for me is a half of a crunchy peanut butter sandwich on a thin piece of my homemade to die for flax seed and whole wheat bread--no oil no white flour. It gets me through to lunch at work. What works for you will be different.
I make smoothies with buttermilk instead of yogurt. Cheaper ($2.79 a half gallon) and less calories and you still get the good bacteria though a different strain. Had one for lunch with lime basil and cucumber from the garden--yumo!! Added a scant tsp of Splenda. total calories about 85. If I use fruit I don't add sweetner.

1 large onion chopped into thick slices
2 - 3 large sweet peppers thickly sliced
1 400g can of tomatoes
Garlic*
Chilli*
cumin*
smoked paprika*
Olive oil spray
4 eggs
Salt and freshly ground black pepper
*All to taste I like mine quite spicy so 1tsp cumin, 2 smoked paprika and a goodly amount of garlic and chilli.
Fry the onions and Peppers until they are soft and sweet (I tend to do this in the microwave for 10 minutes. As I have a tendency to burn the onions, if I'm using just a few sprays of oil, then transfer into a frying pan).
Add the tomatoes, garlic, chilli, cumin, paprika, bring it to a boil and simmer until it's thick (Make to this point in bulk and freeze in portions). Make wells and crack the eggs in one by one. Cover and continue to simmer slowly until the eggs are cooked to your preference.
This will serve two.
There is another version where the eggs are stirred through the hot mixture and scramble slightly, But I prefer the poached version personally.
Traditionally served with warmed flat breads. And as I usually have leftover roasted or griddled courgettes/Aubergine in the freezer I add those into the stew too. But they aren't traditional.
I used to make a very lazy version at work with a tin of Ratatouille, garlic puree, chilli puree, a heaped tsp of mixed cumin and paprika. Heated through, then cracked 2 eggs into it and carefully stirred to cover the eggs, then cooked again on a low power for about 2 minutes (any longer and you risk the eggs exploding in the microwave).

Come to think of it I make a roasted butternut "hash" with BN squash, onions and sweet peppers as a side dish which would work nicely for breakfast. (Nothing special, just BN squash cut into bite sized pieces, roasted at 220C for about 20 minutes, then about half the quantity of onion and red/green peppers added and roasted for another 30-40 minutes until it's all brown and is soft).
Given I had it for dinner last night with turkey bacon and a couple of fry-steamed eggs, that really should have occurred to me before now
. I know what I'll be having for brunch on Sunday now

Ok, ya'll, these recipes REALLY speak to me. I always have leftover roasted & raw veggies in the fridge, and like to eat several eggs a week for the nutrition.
Definitely will try to mix some of these into my breakfast routines!

I love the veggie hash onions, bell pepper. Spinach or kale, garlic and ginger. Sauté and cook down the onion garlic peper and ginger. Throw in the kale at the end. Set aside. Make bacon and two to three eggs over easy. Add some Braggs amino acid to the sauté and then plate. Add eggs on top with 4 or 5 slices of bacon and you have a great start to any day.

I also make a cooked veggie hash of chopped cauliflower, turnips & a little onion and maybe a little minced bell pepper. Cook it up good in a little bacon fat and you'd think it was old fashioned hash browned potatoes. Plenty & black pepper & a little low-carb ketchup on top served along side some fried eggs and a slice of bacon and a slice of fresh tomato if it is a real one . Breakfast heaven.

Personally I'd be making a salad of lettuce and tomato with a hard boiled egg, slice or two of bacon, and a small diced boiled potato, cheese if you still have calories to spare. Nothing says "breakfast" like bacon and eggs.

That sounds wonderful. I have gotten away from lettuce and use a lot of spinach. When I do use lettuce I use a green leaf lettuce and have gotten completely away from iceburg lettuce. I'm trying to pack as much nutrition as I can into what I eat.

I love a healthy fruit salad with my faves incl. apples, drained crushed pineapple, carrots, celery, a bit of red onion; toss apples in lemon juice. I make a big bowl for the week, so I can have some whenever I want. I dish up a bowl, sprinkle with cinnamon, add a nonfat flavored yogurt--my fave is Lemon--add whatever leftover protein you have from the night before and you are good to go. This type of salad doesn't upset my stomach in the a.m. I also make a huge pan of roasted veggies, and eat throughout the week, these would go well with a protein and a bit of starch, for breakfast. Hope all these ideas help.

i definitely think i wake up with a sweet tooth though!
celery and carrots are nice in the morning, lovely and fresh-tasting. a salad for breakfast can actually be quite nice!
