Need some great recipes..hopefully enought to put up for a few days at a time..Need to be soy,egg or bead base

I noticed that there aren't many vegetarian recipes on this site. I'm going to try out some quinoa salads this week.

I find salads and baked vegetables are very easy to prepare and also very tasty!
Spray olive oil on carrot sticks (try also parsnip, shredded cabbage, or cabbage sprouts), and bake together with rosemary (or thyme) and lemon juice, add pinch of salt (optional). Eat them with rice or add them in the salad, or to replace chips/snacks at night...

I love quinoa. I do a bake with quinoa, veggies, seasoning and a little touch of cheese. Its delish, cheap and lasts all week!

My last batch was 1 cup of quinoa, broccoli, zucchini, green onioins, orange pepper, butternut squash, tex mex seasoning and light cheddar. And olive oil to coat the casserole dish. Baked at 350 for 30 or until the squash is soft.

I am also a big fan of scrambling an egg with spinach and mushrooms and serving on top of a slice of whole wheat toast with tomato and avocado.

Acorn squash is easily stuffed with just about anything, I usually use black beans, corn, peppers and green onions. Topped with salsa.

That quinoa dish sounds awesome Des...I just made a quinoa tabouli salad the other day - quinoa, cucumbers, red bell peppers, parsley, EVOO, lemon juice, S&P. It tastes better after a few days chilling in the fridge. Chickpeas would have complemented it well.
