You can use the same cooking method to roast just about any veggie in an oven. I like to do a sheet pan with a mix of brussels, broccoli, red onion, red and/or green bell pepper, mushrooms and sweet potatoes (or pretty much any other veggie), tossed with a little olive oil, kosher salt, fresh cracked black pepper and rosemary. Then just roast in the oven until the sweet potatoes are soft and the veggies are slightly charred. It's a great way to use left over veggies.

Hi

Well i started eating vegetables as in broccoli brussels etc but gee they stink to high heaven. Your fridge will never smell the same.

So now must eat when i cook them. Fruit. Salads etc to take to work etc Dont underestimate the power of a good broth.

Regards
U
