I can only relate by telling you what works for me, so I apologize for that in advance, perhaps something here will help you. I'm trying something new, called carb cycling, so far I'm very happy with how it's working.
I don't believe that low carb hurts your kidneys/ liver, I think it's hype. My Mom was getting really big so started Atkins, and has been eating that way for 30 years, because all her brothers and sisters had old age diabetes and she stopped eating sugar, also starches give her edema and make joints hurt. Shes 86 and in pretty good health, her liver and kidneys are great, so is her heart. She takes only Plavix now because she had a couple of TIA's, and not the tons of prescriptions many seniors do. She lost 130 pounds, too.
I cut out the sugar, dairy, starch and alcohol(induction) for 2 weeks when I started this and I lost a nice chunk. Eating a lot of veggies is good too, a BIG salad for lunch, with protein. My calorie intake for last month averaged 1500 a day, so I'm trying to cut it to 1400 this month because I want to lose a little faster. I also count both carbs and calories, but I'm over 50 and that's the only way it works for me now. And yeah, the exercise is a big plus. I'm sure that and writing down what I'm eating is what's working for me this time. You don't have to kill it every time, some days when I go to the gym I only get to 20 minutes on the elliptical. Go for a walk, get an exercise video, whatever you like to get it going. I hope something here might give you some ideas- good luck.
