I am a potato chip JUNKIE.
My downfall usually is because I crave potato chips. I am addicted!
I have been trying to find an alternative to deep fried potato chips, but I haven't found one I like. The baked chips are okay, but still do not taste like chips to me. I don't mind the creamy dill though
however, I have found a healthier and satisfying solution!
My hubby has a food dehydrator that he uses to make beef jerky and I thought, couldn't I just dehydrate white potatoes and sweet potatoes and get almost the same taste?
YES I CAN
I took 1 sweet potato, added olive oil and sea salt and put them in the dehydrator, they turned out so gooooooood! You can either add 1-2 tsp of olive oil to your *thinly* sliced potatoes (I used a mandolin to slice mine) and add salt to taste. Just make sure that you evenly distribute the oil. You can also do it an even lighter way by spreading out the potato slices and spraying olive oil spray on each one, flip them over and spray the other side. I do this with a pump container that has olive oil in it. They are better for you than the aerosol cans. Then you can just salt each chip to your liking.
The calories in 1 dehydrated sweet potato (85 grams) is 70 calories. 1 tsp of olive oil is 40 calories. That is only 110 calories! Plus all the benefits from eating it naturally. Even if you made 2 of them, you'd still be at 220 calories; you can never eat that many chips for that little calories in a bag of Lays
Hope that someone finds this helpful for their potato chip addiction!

I'm not big on potato chips - not sure why, but never really liked them much. I do like tostitos with dip.
That being said, I just bought some lentil chips - pretty good with hummus. 22 chips +110 calories, 130 gm Na and 3-4 gm protein.

You can buy the dehydrator at Walmart for around $40
I thought of putting popcorn seasonings on them

I looked it up online and a dehydrated sweet potato that is 85g is 70 calories. Even if it's 100 calories, that is still great and much better than potato chips.

for those that don't have a dehydrator you could bake these in the oven at 200 degrees, with the door vented with a towel. that's how i make jerky, it takes about 2 hrs, but potatoes would probably cook faster. and the disposable grill trays work great, like this:

I wanted to add that Popchips are not too bad. They're not the best but they're good and one of the healthier options. They are not fried. You get quite a few chips for a serving, like 27 chips for around 120 calories, I can't remember exactly. Where I live (in Iowa) I can only find them at Target.

Solution? I portion out the bag into 3 snack bags as soon as I buy them. 60% of the time it works all the time!

Your idea sounds great. I may just invest in a dehydrator! Another alternative to chips is one I just found last week at Costco (I'm in Canada so they may or may not be available elsewhere). They are called Snapea Crisps. They are made from green peas and rice and are baked (the ingredient list: green peas, corn oil, rice, salt, calcium carbonate, ascorbic acid). They are only 130 calories for 28 g (equal to 1 oz) and are super crispy and light and taste delicious. You can find them at the Costco here in the salad topping/dressing aisle but they should really be in the snack/chip aisle.
