Have a smaller portion of meat, skip the potatoes and load up on cabbage, turnips, and carrots! The dish is just boiled so you don't have to worry about added fat from the cooking method.

Where I live, we have a few local butchers who corn their own meats. You can choose a leaner cut from them. But seriously, isn't the fat in cornbeef the best part? For St. Patty's day, I'm not even going to worry about it. I'm running a 5K in the morning and I'll be eating those calories burned!
