Vegetable - Egg Scramble

I have been making vegetable egg scrambles lately. They are sooo good and full of good vegetables. It feels awesome seeing all of the healthy colors on the cutting board.

It's basically an omelet (but scrambled since omelets are HARD). I put bell peppers, mushrooms, green onions, grape tomatoes, spinach, and 2 eggs. I try to over proportion the vegetables compared to the eggs, and it works out great.


What else could I put in there and keep it low calorie?

I make these all the time, except that I make it with 1 egg and add whichever vegetables I have at that time - onions (red), tomatoes, and small (hot) green chilies are a must for me.

To make it low calorie, instead of sauteing the onion in butter or oil, just dry roast it. Then, add your vegetables and spices. I generally just put salt and pepper (either black or red) and sometimes add oregano seasoning too. Have it with 2 whole wheat slices of bread or dry chapati. Yumm!!!

Funny, we eat similar for breakfast Smile I cheat in making an omelet..what I do is mix the egg, pour it in the pan, then put Kale in the egg while it's still raw (it's packed with nutriets). When one side is cooked to firm, I flip it to cook the Kale side. Flip it back over, grate in some fresh parmesan cheese, then fold over and put on a plate. You could also add green onion to the kale or use asparagus instead of kale. I also sautee rainbow swiss chard with green onion and just eat on the side with my scrabmled eggs.

My mom puts bean sprouts in her scrambled eggs they are low calorie and a great filler with crunch.
My mexican mother-in-law makes meals by mixing practically every vegetable with eggs and serving them with black beans. My favorite are "ejotes" or green beans. If you can find nopales, they make a nutritious addition as well.
Fresh herbs are also a great way to vary the flavor without adding calories.
I really like fresh basil with my eggs.
