With my low carb muffin (that I pretend is a piece of cake) I wanted to add some real whipped cream but didn't have any so I decided to try a couple spoonfuls of really cold, full fat, coconut milk mixed with a little bit of sweetener (I like erythritol). Wow!! Amazing! I am using coconut milk for a whipped topping from now on.

Thanks for the tip. I'll have to give it a try. Presently I use fat free sour cream sprinkled with Truvia as a topping.

I'm not on a diet... I'm just learning to make smarter choices

Coconut Milk
I use coconut milk almost in all recipes (here is one of my favourite coconut cake recipe http://coconutjuice.co/how-to-... in my opinion it tastes even better then cow's milk.
