I need low-carb/SB Diet lunch ideas

I need some ideas for easy to pack lunches for my boyfriend... We are both saladed out... No more salads!
We love salads but I already make a big one with dinner every night so he wants some variety.. I can't think of anything creative to send with him.. I prefer they be simple recipes but I am now unemployed so I guess I have nothing better to do

Hi Chazen,
I don't know all the rules of the SB diet but I can definitely make a few low carb/high protein suggestions that I make in advance for lunches during the week. Crustless quiche is one. I use Egg Beaters with a little milk or nonfat Chobani for the base then throw in veggies like broccoli, mushrooms, lean ham and fat free feta. I usually get about 30g of protein per serving and minimal carbs from the veggies.
Also, I make "lasagna" with low carb whole wheat tortillas instead of the pasta and extra lean turkey mixed in with the sauce. The turkey gives a lot of protein and the La Tortilla factory brand tortillas only have 80 cals per large tortilla and 12g of fiber. Then I pile on the fat free cheese layer in fat free ricotta or low fat cottage cheese.
I usually have one day ever two weeks where I deem a cooking day. I make a few dishes, portion them out into containers and freeze them. Then it's very easy to thaw and go.
Also for another resource, check out Food.com. They have a great recipe sifter that lets you filter by "low carb" "high protein" and gives you a lot of suggestions.

I'm like SmileNEway and do not know much about SB diet plans. But a quick easy meal that is loaded with protein and complex carbs I currently use.
1 pouch Uncle Ben's "Wild and Whole grain" Brown rice, cooks in microwave in 90 seconds(serving size 1/2 pouch). 1 pouch of Bumble Bee Albacore Tuna(serving size 1 pouch). Mix them together and add a tbs of ranch dressing. I don't use the dressing now but when I started it enhanced the flavor. You can see the counts for this meal on my diet calendar.

A crustless quiche is basically a frittata. Search for frittata recipes and you'll find an endless variety.
You can also make soups, stews, etc.

If so, you can roll just about whatever you like up in a whole wheat tortilla for a great lunch wrap--taco stuff, lean sliced deli meats & cheese & romaine lettuce with a little ranch dressing or light mayo (Krafts light mayo with olive oil is really tasty). How about chili? Send either a thermos of that, or a covered storage dish that can be microwaved. Load it with lean meat and beans and it's a hearty meal that will stay with him well.
If you're still on phase 1 and can't have the grains yet, you can still do wraps, just use large lettuce leaves rather than tortillas, and you can still do the chili.

If you can eat grains, try my "mish mosh." Every week, I make a pot of hulled barley. Then a couple of times a week I use it to make a lunch that uses 1/2 cup barley, 1/4 cup Tasty Bite Madras Lentils, 4 oz of some kind of meat and 1/2 cup of left over veggies. For example, I might use a chicken andouille sausage and sliced zucchini or leftover chicken and frozen peas. You can put together endless combinations, and the result is a really hearty meal requiring just a 2 minute heat-up in the micro.
For lunch at home, my new favorite is making paninis on my Cuisinart Griddler. I use low carb high fiber tortillas and stuff them with grilled veggies, tomato slices, and mozarella cheese. If I want meat, I use a split turkey Italian sausage, or turkey ham steak. While these are great grilled panini style, I'm sure you can pack them up and cook in the micro as well.

Although this is a salad it really feels like a meal - I make my own taco meat with a salt-less combination of spices serve it hot over butter lettuce with 3 tablespoons of salsa, 1 tablespoon of fat free sour cream, and a table spoon of grated extra old cheddar - delicious!!!

I definitely agree with the whole wheat tortilla idea if you're at that stage in your diet. Whole grain and high fiber foods fill me up and keep me feeling satisfied, especially right after working out! Have you tried Wasa Crispbread? I've worked with their team and like them because you can top them with anything you want. I like making a Wasa with fruit and yogurt. They've helped me get more variety in my diet but stay healthy. I love Julian Bakery's smart carb bread. It's really good toasted with peanut butter (better still with banana slices too), only 1 net carb per slice.
