If I am a bartender, is is fair to replace resting with 4hours of standing & 4 hours of slow walking? It's a fairly busy bar & I do all the stocking & cleaning. I don't want to cheat on this...I'm trying to do this right!

I generally put time I spend cooking (and on the weekends I can spend a couple of hours in the kitchen) as "Standing". So I say put in Standing at least.
You could also use this calculator
http://www.fitday.com/webfit/burned/calories_burned_Standing_light_bartending_store_clerk_assembling_filing_xeroxing_put_up_Christmas_tree_.html
and just add it as "Other" and manually put in the number of calories burned.
